Since first learning about biotech as a way to improve animal welfare, I have been hooked. The use of genetic engineering in food systems is one of the most promising ways to reduce suffering for humans and non-human animals. We know how to use technology to make food healthier, more nutritious, and better for the planet. We have done it many times over. What we need now is to make it the most attractive option. I have written a piece imagining a restaurant that embraces this potential in a tractable, and realistic way.
